Healthy Pear Cake
This is a wonderful cake. Dense, moist and delicious. Every autumn, pears are in abundance at Seven Winds Yoga, as regular students are well aware. Come help yourself to pears and try this cake! You may wonder (as I did the first time I made it) how it works. With no butter or oil, how can it be so moist? With no eggs or baking powder, how does it develop texture? Yet this incredible cake never ceases to surprise. Easy to make and easy to eat. Healthy and never cloying. (You can even have it for breakfast.) And when the pears are gone, try it with apples.
1 C. wholemeal spelt flour
1 C. brown rice flour
1/2 teas. sea salt
1 teas. cinnamon
1 teas. freshly grated ginger
1 C. apple juice
1/4 C. chopped walnuts
2 C. peeled and chopped pears
1 C. "pear sauce" (just chop pears & cook up like applesauce)
1/3 C. maple syrup
Preheat oven to 180 degrees C. or 350 degrees F.
Prepare an 8" round baking tin (oil & flour).
Mix dry ingredients together.
Pour into prepared tin.
Bake about 1 hour.
